My babe Meggave me this recipe . I like to prepare it in the dawning knowing it will be perfect by eventide . I lie with it because it ’s everything that ’s delicious about pea soup without greasy ham in it . you’re able to make it vegetarian or vegan ( just omit the butter ) , and either agency , it ’s delish and keeps in the fridge for a few Day .
I do n’t imagine I ’ve ever made it the same path double . I just use whatever veggies I have on hand . calculate on how much liquid ( water or stock ) is add , will determine whether it ’s more of a soup or a stewp ( a thick stew - like soup ) . If you summate tater , it ’s fairly much a yield you ’re having stewp . Which is all right .

If the veggies are quite impertinent and flavoursome , I use water instead of broth . If the veg are lacking in plangency , stock saves the twenty-four hours .
Meg answer the soup with her delicious , homemade cornbread . in person , I have to avoid the cornbread because I end up wanting a bit with every taste of soup !
